You can edit the file wp-content/themes/clubfitness/category.php at line 24
Replace

<h1><?php esc_html_e( 'Latest Posts Under:', 'clubfitness' ); ?> <?php single_cat_title(); ?></h1>

With

<h1><?php esc_html_e( 'YOUR TEXT', 'clubfitness' ); ?> <?php single_cat_title(); ?></h1>
